Buckwheat can be sprouted from hard young seeds. The indigestible coat drops off after sprouting. For porridge, rinse it well and use 1 part of buckwheat to 2 parts of water and cook for 20 minutes. Buckwheat with brown rice flour makes great pancakes.

I often make buckwheat pancakes with just buckwheat flour, egg, water, coconut oil and a teaspoon of cinnamon, which is great for balancing blood sugar. See recipe below.

You can also add cooked buckwheat to soups or stews. Have an adventure in the kitchen and mix it with cooked chicken, peas, pumpkin seeds and spring onions or add it into a salad when cool. As a dessert, mix it with coconut cream/milk and cinnamon.

Ingredients

  • Buckwheat flour
  • Egg
  • Brown rice flour
  • Coconut oil
  • 1 tsp cinnamon

Method

  1. Mix together equal parts of buckwheat and brown rice flour, adding cinnamon if you like.
  2. Add an egg & water, and then mix to your desired consistency.
  3. Cook in pan with a little coconut oil at medium heat until bubbles rise. Flip and cook on other side until lightly browned.
  4. Enjoy!
